Recipe: Roast Tomato & Red Pepper Soup
(for the Ninja or other soup maker)
I've specified fresh tomatoes in this recipe - the act of roasting them enhances the flavours - you can't do that with tinned.
Roasting Ingredients
- 800g tomatoes (8-9 large tomatoes)
- 1 or 2 red peppers
- Olive Oil, Salt, Pepper
Base Ingredients
- 1 Onion, roughly chopped
- 3-4 cloves garlic, peeled
- 1 heaped tsp each dried Basil and Oregano
- 1 tsp Sumac
- 3/4 tsp Dulce Pimentón
- Salt, pepper to taste
- 1 tsp MSG. #MSGMassive
- 1/2 tsp chilli powder (optional)
- 2 tblsp olive oil
Finishing Ingredients
- 300 ish ml vegetable stock
- 150 ish ml double cream
Optional Ingredients
- Basil Leaves
- Wild Garlic (dried) - can buy on Amazon!
- Garlic Granuels (can you have enough garlic?)
Method
Chop tomatoes and red peppers into segments. Drizzle & with olive oil, salt, pepper, and roast in (a) glass container(s) in your Ninja air fryer (or whatever you have available) - roast @ 190c for about 20 minutes until you're happy (pic at the bottom).
Throw in the Base Ingredients, use the chop and sauté functions (takes about five mins).
Pour in the Finishing Ingredients (be careful not to over fill the soup maker) (dried wild garlic and/or garlic granuels can be added here)
Pour in, hit smooth soup, wait 30 minutes
Optional: Shove a few fresh basil leaves in, blend on medium for about 20 seconds.
